Some claim coffee should be drunk short after roasting. Real coffee geeks know specialty coffee needs to rest a bit and is best drunk between week 2 and 7 after the roast. We use the best beans. But more importantly Instead of traveling arround the globe for months and months, our green beans move directly from the FairChain Farmers to conditioned storage, keeping them fresh at all times. This coffee is grown in Limu Kosa zone, close to the birhtplace of coffee. Great place to start a revolution. Together with 350 farmer families with 1 hectare of coffee land (so no cooperative or commercial farm!) we have worked hard to reach the Coffee Olympics. The coffee is fully washed: hand-picked, pre-sorted, floated, pulped, fermented, soaked, washed and dried on raised beds. All done by the FairChain Farming team, in which local lead famers work together with top agronomy expert from Wageningen & Jimma University. A big thanks to Ethiopian FairChain manager Kilil and washing station partner Mesfin for their inspiring guidance.

The roast profile is designed by our team of Q-graders and roast experts. Light roasted perfect for filter and Hario. As espresso is looses some of its intensity but will still thrill you with dynamic and complex flavor signatures. Anyhow, the first 100 CEO’s of Token will finetune the roast profile together with us.

Geek stuff: A sample of the first roast of our blockchain coffee was cupped by coffee sensory professional Wouter Brunia. We integrally transmit to you his remarks: “This coffee is bright and floral with a pineapple sweetness. You can also find notes of green apple, cascara (coffee cherry), peach and nougat. The aroma is floral like coffee blossom and jasmine tea.” Wouter was kind enough to give some brewing advice too: “Best brewed as immersion filter coffee with a french press, aeropress or clever dripper.”
